Bobby Mitchell’s Amazing Chicken Broccoli Casserole [VIDEO]

Here’s a disclaimer: I do not cook very often. When I do, it’s for special people on a special occasion. Take for instance my wife’s recent birthday. I had the kids help dice cheese and beat eggs, mix ‘em in the bowl and record video to forever document the rare event of my cooking in the kitchen.

If you’d like to try this yourself, here’s what you’ll need:

10-oz pkg of frozen chopped broccoli (I picked up some fresh broccoli from the grocer, either works)

6 eggs, beaten

24-oz carton small-curd cottage cheese (naturally I could only find 16-oz cartons)

6 Tbsp. flour

8 ozs mild cheese of your choice (I love mild cheddar), diced

¼ cup butter, melted

2 green onions, chopped

Salt to taste

If you get frozen broccoli, place it in a colander and run cold water over it until it thaws, drain well. Separate broccoli into pieces. Combine remaining ingredients in large bowl and mix until well blended. S

Stir in broccoli. Pour into a greased slow cooker. Add slices of chicken. Cover. Cook on high 1 hour. Stir well, then resume cooking on low 2-4 hours. Alternative method:  just pop it in the oven (that’s what I did) for an hour on high.

When you start hearing crackling and popping from the oven at 30 minutes, check and see if you’ve done something wrong. (In my case, I forgot flour. Oops.) Take it off “high” and cover, then place the setting on “keep warm.” Obviously, you’ve forgotten an ingredient and something is horribly wrong. Either way, sing “Happy Birthday” with your children to your wife and make sure the camera is recording  while you confess your mistake, so she takes pity and says something encouraging.

An important tip:  always remind the person for whom you’re cooking that the children did much (if not all) of the work. No one ever yelled at a kid for burning a casserole. Bon appetite!
